Sausage and Peppers Super Bowl Subs

Ingredients

  • 1 package Johnsonville Italian Sausage
  • 1 medium onion
  • 2 yellow peppers
  • 2 red peppers
  • 5-8 cloves garlic
  • 2-3 tbsp extra virgin olive oil
  • 1 teaspoon basil
  • 1/2 teaspoon kosher salt
  • 1 package Udi's gluten free hamburger buns

Instructions

  • Preheat oven to 450 degrees F.
  • Slice onion in half vertically (top to bottom) and then slice each half into 6-8 wedges. Cut peppers into eighth's. Peel garlic cloves. Divide the vegetables between two lined sheet pans. Toss with 1-2 tablespoons of olive oil and sprinkle with salt and basil.
  • Pierce each of the sausages a couple of times and then nestle among the vegetables. Roast for 15 minutes, rotate the position of the pans (putting the pan that was on the lower rack on the upper rack and vice versa) and roast for an additional 15 minutes.
  • When the roasting is complete, open the hot dog buns and place them on another roasting pan. Brush the insides with olive oil. Pick out the roasted garlic cloves from the veggies and the best you can smear the soft cloves onto the buns. Broil for about 2 minutes until the buns are nicely toasted.
  • Load up the toasted buns with the veggies and sausage!
