I’m wondering what we did before Hummus was a pervasive part of our American snacking regime? I can hardly remember what it was like NOT having a container of this creamy chickpea dip sitting in my fridge. For years it was a “must grab” on any Costco run, and it was a bit embarrassing actually, how quickly we could nosh our way through one of those large tubs and extra large bag of pita chips! I had tried making hummus at home, and honestly I felt like the results were mixed. But then we traveled to Israel last Fall and hummus was part of breakfast, lunch and dinner and I still couldn’t seem to get enough of it. When I returned to the states, I had renewed inspiration to conquer making creamy rich hummus at home and lucky for me I came across Adeena Sussman’s Israeli cookbook, Sababa. I love her hummus recipe because its’ flavors are delicious and uncomplicated, a perfect reminder of the hummus we enjoyed in Israel.
You can make hummus with just five simple ingredients! And since there are only five, trying to find the best quality ingredients is important here. For this super easy version I use canned beans rather than dried and Goya is my “go to” brand. Their chickpeas are always delicious and help to create a super smooth hummus. Tahini, basically a paste made out of toasted sesame seeds, can take on a range of flavors. I go for something that is nutty, creamy and savory. My basic test is, do I want to eat it straight out of the jar/can with a spoon? If the answer is yes, it’s a keeper…and also probably means I need to hide it from myself once it is opened!!
It is helpful, need I say necessary, to have some heavy duty kitchen equipment to make a super creamy hummus. I have used both my Vitamix and my Cuisinart with excellent results. The beauty of this recipe is that you literally just dump all the ingredients in whatever machine you are using and then whirl away and let the machine do its’ thing.
Sometimes I think the hardest part of making this Hummus is simply letting your Vitamix or Cuisinart mix long enough. Letting your machine churn along for several minutes will help you achieve the smooth creamy irresistible texture that is just perfect for dipping! When you are ready to serve your hummus, place in a shallow bowl and creates some swishes and swirls to hold the extra virgin olive oil drizzled over the top. Then sprinkle with some smoked paprika or sumac for a nice little punch of color and flavor!
Super Easy Hummus
Ingredients
- 2 15 oz cans chickpeas, drained
- 3/4 cup drained chickpea liquid
- 1/2 cup tahini
- 1/3 cup freshly squeezed lemon juice (about 3-4 lemons)
- 3 cloves garlic, minced
- 2 teaspoons kosher salt
- extra virgin olive oil & smoked paprika for serving
Instructions
Method 1-For Cuisinart
- Place the chickpeas, ¾ cup liquid, tahini paste, lemon juice, minced garlic and salt in the bowl of a food processor. Process for 2-3 minutes, or until desired creaminess is achieved. (Depending on your chickpeas you may want to add in additional reserved chickpea liquid and salt)
- To serve, spread hummus in a shallow bowl. Drizzle with extra virgin olive oil and sprinkle smoked paprika.
Method 2-For Vitamix
- Place the chickpeas, ¾ cup liquid, minced garlic, tahini paste, lemon juice and salt in a Vitamix container in the order listed. Start the machine, slowly increase the speed to the highest level and blend ingredients for 1 minute. (Depending on your chickpeas you may want to add in additional reserved chickpea liquid and salt)
- To serve, spread hummus in a shallow bowl. Drizzle with extra virgin olive oil and sprinkle smoked paprika.
