Super Bowl is always a good excuse for a celebration and the planning of some serious snack food. But when it’s YOUR team (Go Chiefs!!!) that makes it to the game of the season, well the excitement and planning are elevated to a whole new level!! Therefore developing a Super Bowl snack that included team colors (I love a theme!) has been top priority these past couple of weeks here at The Fabled Table! Oh, I know, some of you have been preparing for the big game by spending literally hours reading Arrowhead Addict, listening to podcasts, searching for even more articles running through your news feed dissecting the game and how The GOAT V The Kid Super Bowl will play out. I know it’s all fascinating stuff….but to make the game a really great experience, I’m a firm believer that the snacks, and in this case these Sausage and Peppers Super Bowl Subs need to be a part of your game day plan!
These sub sandwiches are perfect game time snacks. Six easy to find ingredients (including salt and buns that didn’t make it into this photo) that require minimal prep so you don’t have to spend your Sunday afternoon in the kitchen.
You are basically making a sheet pan dinner, and then tucking all of your nicely roasted items into a toasted bun, how delish does that sound? Slice up the onion, cut the peppers into eighth’s and peel the garlic. Divide these between two lined sheet pans, toss with olive oil and then sprinkle with salt and some basil. Pierce each of the sausages in a couple places (I usually use the tip of a paring knife) and then nestle amongst the veggies. Roast in a 450 degree oven for about 30 minutes.
Once everything is roasted it’s time to prepare the buns! I used Udi’s Gluten Free Hot Dog Buns (found in the freezer section) and they were delicious. To give the sub a little bit more flavor and texture, open up the buns and brush the inside with extra virgin olive oil (EVOO) and spread/smear (as best you can) each with the roasted garlic. Broil (open faced) for a couple minutes to toast the buns.
And when you’re ready to eat load up the buns! Of course you can spread these with ketchup and mustard (more red and gold!!) or the condiment of your choice, but we found we loved them as is! Enjoy! and Go Chiefs!!
Sausage and Peppers Super Bowl Subs
Ingredients
- 1 package Johnsonville Italian Sausage
- 1 medium onion
- 2 yellow peppers
- 2 red peppers
- 5-8 cloves garlic
- 2-3 tbsp extra virgin olive oil
- 1 teaspoon basil
- 1/2 teaspoon kosher salt
- 1 package Udi's gluten free hamburger buns
Instructions
- Preheat oven to 450 degrees F.
- Slice onion in half vertically (top to bottom) and then slice each half into 6-8 wedges. Cut peppers into eighth's. Peel garlic cloves. Divide the vegetables between two lined sheet pans. Toss with 1-2 tablespoons of olive oil and sprinkle with salt and basil.
- Pierce each of the sausages a couple of times and then nestle among the vegetables. Roast for 15 minutes, rotate the position of the pans (putting the pan that was on the lower rack on the upper rack and vice versa) and roast for an additional 15 minutes.
- When the roasting is complete, open the hot dog buns and place them on another roasting pan. Brush the insides with olive oil. Pick out the roasted garlic cloves from the veggies and the best you can smear the soft cloves onto the buns. Broil for about 2 minutes until the buns are nicely toasted.
- Load up the toasted buns with the veggies and sausage!
